Thierry specialises in the 'Croquembouche', a traditional French style wedding cake. The croquembouche originates from the early 18th century.

The Croquembouche is a pyramid of profiteroles, filled with crème pâtisserie, bound with caramel and decorated with caramelised sugar, sugar flowers, or ribbons. Each cake is unique and handmade.

The Croquembouche is freshly made and assembled on the day of the wedding and can be delivered or collected. It must be kept in a cool place but not refridgerated.
